Summer is in full effect and I have a tasty recipe for you to try! I wanted to add a summer twist on my salsa, which in all honesty can be made year around! I have partnered with Veggie Season's to explore the flavors of the seasonings that they offer and make an awesome recipe!

Okay now let's get into this recipe:
Ingredients:
1 Pack of Chicken Thighs
1 Cup White Rice
2 Medium Mangoes
1/2 Red Onion
1/5 Green Pepper
1 Large Tomato
1 Clove Garlic
1/2 cup Spinach (optional)
2 Tablespoons Olive Oil
1 Lime
1/4 Tablespoon of Veggie Season's Farmhouse Ranch
2 Tablespoons of Veggie Season's Spicy Herb
1 Tablespoon of Veggie Season's Roasted Garlic Butter
1/4 Tablespoon of Veggie Season's Red Pepper Cajun
Step One: In a large bowl, drizzle olive oil over the chicken thighs. Then sprinkle Veggie Season's Spicy Herb and Roasted Garlic Butter on the chicken. Chop garlic and add it to the bowl. Mix the bowl contents together until the chicken thighs are evenly covered in seasoning and olive oil. Let the chicken marinate for 30 minutes. I suggest marinating overnight if you have the time.
Step Two: Preheat the oven to 350F. Place marinated chicken on a non-stick baking rack or pan and bake the chicken for 1 hour. Flip chicken over every 20 minutes to evenly brown the chicken.
Step Three: Boil rice on medium heat until desired firmness. Sprinkle Veggie Season's Farmhouse Ranch on the rice. Squeeze half a lime on the rice. Optional: Chop spinach and mix it into the rice if you would like to add more veggies to your dish.
Step Four: Chop the mangoes, red onion, green pepper, tomato and toss in a bowl. Squeeze half a lime on the salsa. Sprinkle Veggie Season's Red Pepper Cajun on the salsa. NOTE: The seasoning is spicy. Sprinkle seasoning then taste the salsa. Add more if you desire.
Step Five: Plate your Delicious Dinner and ENJOY!
